If you ordered a new saddle for the Mini you can simply swap it by opening the seatpost clamp and swap the whole seat post with the seat attached to it. 

With the Junior and Maxi bikes you can open the saddle clamp by loosening the bolt at the bottom of the saddle. After you switch the saddle make sure you tighten the bolt so it's secured.
